Ingredients (Serves 4):

  • 2 organic zucchinis
  • 1 fresh garlic clove
  • 2 tablespoons Veggie Garum
  • A handful of fresh mint leaves
  • A drizzle of organic canola oil
  • A splash of extra virgin olive oil (EVOO)

Instructions:

  1. Start by preparing your zucchinis. Wash them thoroughly and cut them in half lengthwise. Slice them into pieces about 0.5cm thick, making sure not to cut them too thin; you want them to retain their crispiness.

  2. In a small pan, heat up a splash of extra virgin olive oil over gentle heat. Add the thinly sliced garlic clove and let it gently fry until it turns lightly golden, infusing the oil with its aromatic flavor.

  3. Now, it's time to sauté the zucchini. In a non-stick pan, heat a few drops of canola oil over very high heat. Add the sliced zucchini and cook them until they take on a lovely golden color.   4. Remove the pan from heat and transfer the sautéed zucchini to a mixing bowl. Add the garlic-infused oil, some finely chopped mint leaves, and the star of the show, 2 full tablespoons of Veggie Garum.

  5. Gently toss everything together to ensure the zucchini are well-coated with the flavorful mixture.
