Herb Mayo with Garum Infusion: Video Recipe

Ingredients
  • 2 egg yolk
  • herbs, in our case chervil
  • 50g of lemon juice
  • 50g of Veggie Garum
  • 200-300g of corn/maize oil. The more oil you add, the thicker the consistency you’ll obtain.

Instructions
  1. Combine 2 egg yolks, a handful of fresh chervil of your herbs of choice, 50g of lemon juice, and 50g of Veggie Garum.

  2. Blend the ingredients together until well combined.

  3. Slowly drizzle in 200-300g of corn or maize oil. The quantity of oil will affect the consistency, so add more for a thicker texture.

  4. Continue blending until the mixture reaches a smooth and creamy consistency.

  5. Taste and adjust the seasoning if needed.

  6. Transfer the herb-infused mayo to a container and refrigerate until ready to use.
