Mattia is the inventor of our products and co-founder of The Garum Project. He is our Head of Innovation, author of a fermentation book for chefs and Chef de Cuisine at Bad Schörgau. Mattia thrives on transdisciplinarity. He focuses on how we can have a positive impact on our environment through food and combines all this in his work.
Fun Fact: While he carefully writes down each recipe, he believes in achieving innovation by never doing a recipe the same way twice.
