Umami Elegance: Garum-Infused Risotto

Ingredients (Serves 4):

  • 200g of carnaroli rice
  • 2 tablespoons of Chicken Garum
  • Assorted vegetables from your fridge (such as red onions, carrots, zucchini, and more)
  • Organic butter
  • Mascarpone cheese
  • A touch of good vinegar, lemon, or lime

Instructions:

  1. Begin by finely dicing a colorful assortment of vegetables from your fridge. Red onions, carrots, and zucchini work beautifully for this dish.

  2. In a dry pan, roast the Carnaroli rice over medium heat. Use your hands to gently mix the rice as it heats, continuing until you can't touch it anymore. This should take about 60-70°C. Be careful not to let the rice color or burn during this process.

  3. Add water to the pan, along with all the diced vegetables and the two tablespoons of Chicken Garum. As the rice absorbs the liquid and cooks, you'll start to see the risotto come together.

  4. The cooking time may vary, but aim for that perfect "al dente" consistency. When the water has fully reduced and the rice is tender but still has a slight bite to it, remove it from the heat.

  5. Now, it's time to enhance the creaminess of your risotto. Mix in some mascarpone cheese and organic butter until you achieve a luscious and velvety consistency.

  6. Taste your creation and adjust the flavor to your liking. If you desire an extra layer of cheesiness or umami, add a few more drops of Chicken Garum or even a splash of Milk Garum.

  7. To brighten up the dish and add a refreshing zing, finish it off with a few drops of lemon juice or a touch of vinegar.

Chef’s Advice: Testing the rice consistency is key to a perfect risotto. Simply take a single grain of rice and gently squeeze it between your fingers. If it breaks with two cracks, you've reached the ideal level of doneness. Three cracks mean it's overcooked, and if it splits in half, it needs a bit more water and a few extra minutes of cooking.
