Garum-Kissed Beef Tartar: Elevating a Classic

Ingredients (Serves 4):

  • 200g of organic beef
  • 2 teaspoons of Beef Garum
  • Mustard
  • Shallots
  • Capers
  • Egg yolk
  • Extra Virgin Olive Oil (EVOO)
  • Brandy
  • Worcestershire sauce

Instructions:

  1. The key to a sublime beef tartar is in the dressing, and Garum is here to help you achieve it. Begin by finely mincing the organic beef with the precision of a very sharp knife.

  2. Dice one shallot into fine pieces. To mellow its aggressiveness, briefly blanch the shallots in boiling water for just 2-3 seconds, then drain them.

  3. Dice ten capers, and in a mixing bowl, combine the blanched shallots, capers, a few drops of EVOO, a teaspoon of brandy, and a few drops of Worcestershire sauce.

  4. Now, it's time to introduce the star ingredient: Beef Garum. Add two teaspoons of Beef Garum to the mix, elevating the complexity and intensity of your tartar.

  5. For an intriguing twist, create a crispy, runny-centered treat. Open an egg and gently place the yolk on a bed of breadcrumbs, covering it with more breadcrumbs. Freeze this breadcrumb-coated yolk.

  6. Heat some oil to 180°C (356°F) and fry the frozen egg yolk for 1 minute and 30 seconds until it becomes crisp on the outside but retains its delectable runny center.

  7. To assemble your masterpiece, serve your beautifully dressed tartar and place the crispy, golden yolk on top. It's a visual and textural delight that adds a unique touch to your dish.

The result? A harmonious and properly dressed tartar that respects and enhances the delicate taste of the raw beef. Garum plays a pivotal role in achieving the perfect balance of flavors, elevating your beef tartar to an art form.
